Tasting Notes
An intense deep red color with a very attractive purple hue. Complex and aromatic, the spices stand out, with red bell peppers, black peppercorns and hints of berries and minerality looming. All of these aromas, topped-off by vanilla and chocolate notes from its aging in French oak, achieve a nice complexity of aromas. Harmonious in the mouth, with balanced acidity and juicy, elegant tannins, this wine ends with a persistent finish.
Vineyards
San Rafael is a region with varying altitudes, different soils, and varietal characteristics that are not the same as other parts of Mendoza. The grapes for Famiglia Bianchi Cabernet Sauvignon come from three different vineyards in San Rafael (Finca Doña Elsa, Finca Asti and Finca Constanza) and from three different vineyards in the Uco Valley (Gualtallary, Los Chacayes and Los Árboles), This means different soils of Alluvial origin and varying micro-climates, which allows Bianchi’s winemakers to obtain an interesting complexity of both the wine’s aromas as well as its flavors.
Winemaking
The grapes are hand-picked, sorted and destemmed before traditional fermentation and maceration. Ten percent of the wine is aged in French Oak for eight months, then reunited with the wine that remained in stainless steel vats. It is then bottled and rests for a few months before release.
