Tasting Notes
Our 2022 Cabernet Sauvignon reveals a deep, enticing character marked by vivid notes of cherry and plum. The palate shows smooth and juicy dark fruits, such as blackcurrant and blackberry, creating a tapestry of lush flavors. The texture is remarkably smooth and even, making it exceptionally approachable yet sophisticated. Finely woven tannins provide a backbone that is both sturdy and supple, allowing the rich fruit flavors to shine through while maintaining a harmonious balance that is both luxurious and accessible.
Vineyards
The fruit for the Benton Hills Cabernet Sauvignon was carefully sourced from some of our favorite Cabernet Sauvignon blocks of the estate. The warm vintage allowed for long hang time in the vineyard and tremendous flavor development in the grapes without over-ripening and loss of varietal character.
Winemaking
During fermentation, the wine was pumped over twice daily until a balance of color, structure, and flavor extraction had been achieved. Malolactic fermentation was completed on oak, smoothing, and softening the wine.
