Winemaker Notes
The grapes from the Pascual Toso Estate, located in one of the best wine growing areas in Mendoza, with vineyards planted in stony, alluvial soil in the Barrancas area of the Maipu district of Mendoza. After hand-harvesting and careful destemming, cold maceration takes place for two days at 46 F. The wine is seeded with selected yeasts and fermentation takes place at 78o F between 15-20 days.
