Overview

A brilliant straw yellow in color, with greenish reflections, this refreshing white wine has a nose that conjures bright tropical fruits, citrus and the particular varietal aromas of fennel and scrub brush. The palate is fruity, with good structure and a touch of bitterness that is characteristic of the Verdejo grape.





 

Wine Facts

Winemaker Notes
The grapes come from 30 year-old vines planted in North Central Spain. The soil is largely devoid of organic matter, formed by layers of boulders with some limestone at the highest layer. The climate is Continental, with some influence from the Atlantic Ocean. The grapes undergo 12 hours of maceration at low temperatures. Then, they are pressed with a horizontal pneumatic press in an inert atmosphere. The resulting juice is fermented at low temperatures in stainless steel tanks. It is then racked to remove the lees and, prior to bottling, is fined and cold stabilized.


Serving Hints
This wine is ideally served slightly chilled with all types of seafood and fish, as well as light pasta and rice dishes.
