Winemaker Notes
The grapes come from three different vineyards – one parcel with old vines of more than 50 years, and the other two with about 15 year old vines. Fermented using a process called “bica aberta” (without skin contact) which lasts for nearly a month at temperatures varying from about 57.2° F and 60.8° F. The wine is kept for three months in stainless steel vats.
