The 2015 Parson’s Flat has lively aromas of black cherry, licorice and cinnamon which follow through to the palate. There are mocha flavors as well. Excellent tannins and a fresh, minty finish.
The fruit for this wine was sourced from our family vineyards in Padthaway. These vines are grown in various soil types including red loam, black loam and deep sand over limestone. Each parcel is harvested at optimum ripeness and then fermented on skins for approximately seven days. The wines are matured for a period of 18 months and 30% of the wine is matured with French oak. Serving Hints This wine is best served at room temperature with hard cheeses, meat pizza or Italian Meatballs and spaghetti.
